Who doesn’t love pancakes?If you’re honest with yourself, you’d love pancakes at least once a week!If you’re interested in looking after your health or that of your children, then fast food or a helping of fries won’t be a standard meal for you.And that’s what makes pancakes so perfect, because you can make them as healthy as you wish and they’re ready in a jiffy.What about Pancake Tuesday every week?
This pancake recipe uses spelt flour, rice milk, coconut blossom sugar and banana, which are all healthier alternatives to white flour, milk, refined sugar and eggs respectively.That makes this the perfect pancake recipe, and while you can eat any fruit with it that you want, we’ve gone for apples.In fact, they go with anything!
Recipe for pancakes made with spelt flour with banana and apple, cooked in coconut oil
Makes 4 large or 8 small pancakes
Ingredients for the pancakes
1 ripe banana
3 tbsp spelt flour
80 ml rice milk
a pinch of fleur de sel
1 packet of vanilla sugar
2 tbsp coconut blossom sugar
1 large apple
50 – 50 g Cocoslove coconut oil
Preparing the pancakes
Place the banana, the flour, the rice milk, the fleur de sel and the vanilla sugar in a blender and mix until it forms a smooth batter. Pour it into a bowl.
Peel and core the apple.Dice it and mix it in with the batter.Leave to rest for five minutes.
Melt the coconut oil in a pan and add 1 tbsp of the batter (to make pancakes as pictured) and cook until brown on both sides.Drain on kitchen paper.
Mix the coconut blossom sugar with a little cinnamon and scatter on the pancakes.Add some sliced almonds, let cool a little and serve warm.Bon appétit!
